What is Barbacoa?
Barbacoa is an authentic Mexican dish that originated in the Arawak-speaking Caribbean with the TaĆno people, from which the term "barbecue" derives. It's usually made with beef, goat, or lamb.
Traditionally, it's seasoned with dried chilies, lime juice, garlic, and spices like cumin. Barbacoa was low cooked traditionally in a Pozo (an in-ground pit or outdoor oven). Now, we can rock out this dish in a slow cooker.
Barbacoa has become a backyard favorite for potlucks and family gatherings. It's an easy way to take a less expensive cut of meat and make it into something spectacular that will feed many.
Hey, this may be a great idea for Father's Day. And if you don't need to feed a family as large as mine you can easily half the provided ingredients list to make less. But taco bars are an easy way to please everyone in your household.

There are lots of benefits to owning a crockpot. I assume you already have one if you found me in a search, but if you are one of my regular readers you may not have one yet. I think everyone should have a crockpot. There are so many benefits to owning a slow cooker, whether crockpot or multi-cooker (like Instant-pot on slow cook setting).
Our mothers figured this out in the '70s and '80s as they left the home to go into the workplace. Now, with our busy lives, whether we work or not, time is a precious commodity.
Here are the top benefits of using a crockpot:
- Easy preparation by placing everything into one pot.
- Easy cleanup because you don't use numerous pans.
- Having an easy-to-make meal eliminates the temptation to order take-out and saves you money and avoids a less healthy meal.
- The slow, low-temperature cooking in a crockpot is perfect for tenderizing meat (especially useful for less expensive meats).
- Slow cookers are great for summer cooking since they don't radiate heat like an oven.
- On a similar note, a crockpot uses less electricity than an oven.
- A crockpot is a great way to blend and bring out the delicious flavors in soups and stews.
If you've never had a slow cooker and you are worried about running it while you are away from home during the day, you may want to try using it during alternative times. One of the cool things about a crockpot is that you don't have to be involved. Using your slow cooker while you sleep is a great option if you're worried.

Omaha Steaks Easy Crockpot Meal: Barbacoa Beef Tacos
Ingredients for slow cooker Barbacoa Beef
- Beef – Well, hello captain obvious! An Omaha Steaks chuck roast is a great option that yields super tender results. I also love cooking with Omaha Steaks beef sirloin tips and had them in the freezer from a recent stock-up order (the way to do it, seriously, the best deals!). This turned out SO good!!
- Beef broth– It's great to vegetable broth is a good substitute here if that's what you have, or use a beef bullion in water.
- Garlic– I love to use fresh garlic in just about EVERY recipe, I don't think you can use too much!
- Cumin and chili powder – I like to use chili powder instead of using whole chilis… I find that it results in a more mild flavor (my family doesn't love the heat), AND it's usually what I have on hand.
- Tomato paste – A can of tomato paste makes for a great "paste" for the sauce, it thickens it up and adds delicious depth.
- Salt and pepper – Season the meat with a fair amount of each, as a rub, to help tenderize and keep the flavor vibrant.
- Fresh lime juice – Whenever I eat tacos, nachos, guacamole (or pretty much anything with a slightly Mexican flair) I'm all about the lime! Some barbacoa beef recipes call for vinegar, but nothing compares to that fresh lime (plus, it's fun to pick a fresh lime from our trees!).
How to make tender, slow cooker Barbacoa Beef:
- Make barbacoa sauce: Whisk together beef broth with tomato paste, garlic, and spices.
- Add beef and mixtures to slow cooker: Rub salt and pepper into the beef, place in slow crockpot and pour mixture over beef.
- Cook in slow cooker for that tender, low and slow cook: I recommend cooking on low for 8 hours, though if you really don't have time, cooking on high for four hours works as well.
- Slice or Shred beef: Remove beef from slow cooker (leave broth) and shred with two forks or cut into small, bite-size pieces.
- Add lime and let rest to soak flavors: Cover beef with slow cooker sauce and cover with fresh lime juice.
Ingredients
- 2 lb Omaha Steaks beef sirloin tips
- Salt and freshly ground black pepper
- 1 white onion diced
- 1 cup beef broth
- 4 oz tomato paste
- 6 garlic cloves
- 1 tsp ground cumin
- 4 tsp mild chili powder
- juice of one fresh lime
- fresh cilantro
Instructions
- Lay onions in a 6-Quart Slow Cooker or Instant Pot (with slow cook function)
- Rub salt and pepper into beef and lay beef over onions.
- Combine the beef broth, tomato paste, and seasonings (except for lime juice) in a measuring cup.
- Pour broth mixture over sirloin and cook on high for 4 hours or low for 8 hours (the lower and slower, the more tender!).
- Once beef is cooked, cut or shred, then return to slow cooker and stir in lime juice.
- To serve beef, top with fresh chopped cilantro and serve alongside toppings of your choice. Reserve broth mixture as a sauce to top tacos, if desired.
